What’s in your spice rack?

One of the questions I frequently get asked is “What’s in your own spice rack?”
As you might imagine, there are a lot of spices in my kitchen. My main kitchen spice rack has room for 144 small spice bottles. Together with miscellaneous other small racks, boxes, bags, jars, &c., to supplement this, I generally have around 200 spices in my kitchen, and sometimes another hundred at my desk. The contents change pretty rapidly, based on what we’re working on, or what I’m interested in at any particular moment.

Pumpkin Spice

Walking through a major grocery store yesterday, I ran into a cardboard island stacked with pumpkin spice marshmallows. They’re orange-brown, squishy, and shaped like little pumpkins. On the package, there’s a cartoon illustration of cinnamon sticks and a piece of pumpkin pie with a stereotypical (and utterly inadequate, IMHO) dollop of whipped cream on top. And, of course, they’re allegedly flavored something like pumpkin pie –or maybe like the Starbucks seasonal latte, which seems to have started the whole “Pumpkin Spice” trend.
